Cheese Tortellini and Ranch Salad
Ingredients
- 1 package (19 oz.) Celentano Cheese Tortellini
- ½ cup frozen petite peas, thawed
- 1 cup Ranch Dressing
- 1 green onion, finely chopped
- ½ cup red bell pepper - chopped
- 2½ tablespoons freshly chopped parsley
- 6 ounces Swiss cheese, cut into cubes
- Optional: cubed ham
Directions
Cook tortellini according to package instructions, strain cooked tortellini and add to a large bowl. In the large bowl with the tortellini, add the peas, ranch, green onions, red bell pepper, parsley and Swiss cheese. Toss the salad until all ingredients are evenly combined. Chill the tortellini salad covered for at least 2 hours before servings.

I just finished making this tortellini salad for the fourth time, and now I'm sure this recipe is a keeper. Perfect proportions of flavors makes it a hit in my family. I have varied it by adding cubed ham or cubed genoa salami. I'm not a huge fan of swiss cheese so I've either skipped the cheese completely or I've added a handful of shredded cheddar. If you use this recipe you will not be disappointed!
