Cheese Tortellini Chicken Salad

Ingredients

  • 1 package (19 oz.) Celentano Cheese Tortellini
  • 1 ½ cups cooked chicken, cubed
  • ¼ cup sliced green onions
  • ¼ cup mayo or miracle whip
  • 1 bottle (8oz.) Coleslaw dressing
  • Salt and black pepper to taste
  • 1 cup red grapes, cut in half
  • 1 can (8oz.) pineapple tidbits, drained
  • 1 cup cashews or walnuts
  • 1 cup diced red apple

Directions

Bring a pot of water to a boil. Cook tortellini according to package instructions, drain and let cool to room temperature. In a large mixing bowl, add chicken, green onions, mayo, Coleslaw dressing and salt and black pepper - stir to combine all ingredients. Add cooled tortellini to the mixing bowl and stir to evenly coat. Refrigerate overnight if desired - pasta will soak up the dressing, so you will need to add a little more the next day. Before serving, add the grapes, pineapple, red apple, and nuts. If needed add additional Coleslaw dressing to coat ingredients.
