Italian Meatball Summer Salad
Ingredients
- 1 package (26oz.) Rosina Italian Style Meatballs
- 3 tomatoes, roughly chopped
- 1 cucumber, diced
- ¼ red onion, thinly sliced
- 1/3 cup extra virgin olive oil
- 1/3 cup white wine vinegar
- ½ cup fresh ricotta
- Basil leaves
Directions
Cook Rosina Italian Style Meatballs according to package instructions.
Add tomatoes, cucumber, and onion to a plate. Drizzle with oil and vinegar. Top with warm meatballs, remaining crumbled ricotta and basil leaves.
